Cooking With Jill

I wish I was a good cook...my family does too.

I dream about it and it's probably one of the first things I would change about myself if I could. It's very, very rare that we sit down to eat and everyone at the table is happy.

I follow recipes really, really well...but even then it doesn't turn out well. I don't taste as I cook and that's probably my problem.

I try new recipes regularly and amalways looking for our family's next favorite meal. I have a few recipes that we love and I can make pretty well. But we are getting tired of them. So that's where you come in....

Do you have any favorites in your family that you would like to share with me? I'm also trying to add vegetarian meals to our diet (and budget) so if you have any good vegetarian recipes, let me know!

    Cooking food everyone likes is always an issue. Here are 2 of my duaghters' favorite recipe that my husband also liked. They both make good leftovers too. By the way, I love your pictures and blog!

    Shepherds Pie

    1.5 pounds ground beef
    1 cup chopped onions
    1 cup sliced or diced carrots
    1 cup chopped celery
    1 cup frozen corn
    1 10-ounce can of beef gravy

    Mashed Potato Topping
    Prepare about 3 cups of mashed potatoes. (It takes 5-6 medium baking potatoes to make 3 cups, but instant potato flakes work also) Add 2 to 4 tablespoons of butter and one egg. Beat well. Set aside.

    Cook the diced carrots just until crisp tender. (The microwave will do this quickly.) Meanwhile, brown ground beef with onions and celery. Drain well. Add cooked carrots, corn and canned gravy. Pour into a 2 quart casserole or 9 x 13 baking dish. Stir to mix well. Prepare the potato topping. Cover the meat mixture with potatoes. Bake at 400ºF for 20 to 30 minutes or until potatoes are lightly browned. (Time will depend on the depth of the casserole.)
    (You can mix any vegetable you like into the mixture - wehn I was rushed I used a bag of frozen mixed vegetables.)

    Greek Chicken

    4 tablespoons olive oil or butter
    ¼ teaspoon basil leaves
    2 tablespoons Worcestershire sauce
    2 cloves garlic, chopped
    ¼ cup finely chopped onion
    ¼ teaspoon of thyme
    1 teaspoon oregano leaves (dried) ¼ cup lemon juice
    3 - 4 pounds of chicken parts

    Heat oven to 350˚F. Place oil or butter in a 9 by 13 inch baking dish. If butter is used, put in oven to melt while oven is heating. When melted, add other ingredients except chicken. Mix well. Add chicken parts, turning to coat with herb/oil mixture. Then turn skin side down and roast for 30 minutes. Turn over and roast for another 20 minutes. If desired, the chicken may be broiled briefly before serving if a crispier skin is desired. Serves 6 to 8.

    I made a new recipe the other night, Tamale casserole, that turned out pretty good and everyone ate so I was happy!
