Christmas Cookies

We haven't made too many Christmas cookies this year because we don't want to eat too many! But we made these on Saturday and I was really happy with how they turned out. We love the traditional peanut blossoms....but we can't make them anymore due to Syd's peanut allergy. But I found this easy recipe and changed it a bit to make it more colorful.

Peppermint Hershey Kiss Cookies

1 17.5 oz package sugar cookie mix
1/3 cup butter, softened
1 large egg
1-3 Tbsp. flour
1 tsp. peppermint extract
4-5 drops red food coloring
4-5 drops green food coloring
36 Hershey kisses

Preheat oven to 375 degrees.

Dump cookie mix into large mixing bowl. Add softened butter, egg and one Tbsp. flour.
Mix until it forms a soft dough.

Divide dough in half. Add peppermint extract and green food coloring to one half. Knead it into the dough until well-incorporated. Add a tablespoon of flour if dough is too sticky.

Add red food coloring to the other half. Add a tablespoon or two of additional flour if the dough is too sticky.

Pinch off a teaspoon of red dough and a teaspoon of green dough. Stick together and form a ball. Important: don't knead them together or the colors will mix.

Place balls 1 inch apart on an ungreased cookie sheet. Bake 10-15 minutes, until cookies are lightly browned on the bottom.

Remove from oven and immediately press a Hershey kiss in the middle of each cookie.

  2. Loved those cute cookies! Nice change from Peanut Butter Blossoms. I'm going to make some today - I'm using the Hershey's Special Dark Chocolate kisses - isn't dark chocolate supposed to be "healthier" or am I just justifying making cookies? Hope mine turn out as pretty as yours, but I won't have cute little helpers like you had!
